Showin' some ❤

This poor blog has been neglected due to pure chaos aka my life. Two kids kept busy can wear a mom out but I would rather be worn out than my kids being cranky hoodlums. I will keep the cranky busy kids. Sports and clubs can help some things but attitudes just come with the territory.

It's summer and a whole new set of activities start but at least we have ☀and 100+ temps. I will take it if it means no homework.

Of course drama follows me, always happens when I try to please people who just don't care. I may have drama but I always have some cute pics with it.

Wonder how I handle my stress? πŸ’πŸ“·

Worn Out

Oh where, oh where, did my energy go?

This has been one of the most exhausting weeks. It's nice to relax even for a few minutes, Corey is practicing soccer, Ally is smooshing ants with a soccer ball, keV is talking on his phone (ugh) and it's warm but nice out. Someone hand me a margarita and I would be set. Don't see that happening but I did promise ice cream afterwards.

Monday Musing

I love being a fly on the wall and listening in on the conversations my children have with each other. Most of the time I'm hiding behind a door and smiling from ear to ear. I must share this story that happened last week after I picked my son up from school in the car on the way home.

Corey: Mom, when does dad get back?
Mom: Tomorrow night
Ally: Daddy's in I A HO visting his girlfriend
Corey: What the heck! Mom is dad's girlfriend
Ally: NOOOOO Mommy is THE MOMMY!
Corey: Duh! I know that but dad married mom so shes his girlfriend. You don't know what your talking about.
Ally: Oh. I'm going to marry Jake
Mom & Corey: What happened to Thomas?
Ally: Thomas loves Tevor Jake loves me
Corey: Shes crazy!

LMAO!!! Seriously I couldnt stop laughing.

MIA

This poor blog has been neglected for so long, but now that I have joined the iPhone world I can blog whenever I feel like it. Scarey thought huh! It's funny how I was so against getting one of these phones and now I don't know what I would do without it.

Since I've been gone so long let's see how I can sum things up..... Bought a house, remodled it, moved in, fought with our old landlord, fought with our new hoa, had a wonderful holiday season, C turned 7, K turned 35, went to Legoland for vacation, A turned 4 and had her first dance recital and then graduated from preschool. Whew and summer hasn't even started yet!

To tell u the truth summer will be mellow, no big plans other than MY birthday but I will be reminding everyone has it gets closer lol :) C is in year round school so he doesnt get a summer vacation other than 2 weeks in august. Bummer huh.

That's really it, just celebrated 10 years with my company, yeah me! And holding down the home fort too while K is a workin machine.

That's my Im Back speech and now to Lakers game!

Organized - ME???

Tomorrow is back to school!! EKKKKK!!! My relaxing one drop off/pickup, no homework and no packed lunches days aer OVER!! This school year I have once again a 2 kid/2 school pick up, packed lunches, homework (and man Corey gets alot), soccer and piano. Thanfully Ally's dance class is during school hours. I've decided this year I'm going to try and make a bunch of dinners ahead that can just be thrown in the oven, keeping in under an hour so I can work on homework before dinner.

This is my first shot at making dinners ahead, I even made some of them in throw away pans :) They are nothing special but simple dinners my picky kids will eat.

Pasta Bake

1 box of whatever pasta
1 pound lean ground beef
1 onion, chopped
1 (28 ounce) jar spaghetti sauce
2 cups shredded mozzarella cheese
Cook pasta as instructed 8-10 min or al dente. Drain well.
Meanwhile, cook ground beef and chopped onions in a skillet over medium heat until browned.
In a large bowl, mix together spaghetti sauce, shredded mozzarella cheese, pasta, and browned ground beef and onion mixture. Transfer to a greased, 9x13 inch casserole dish.
Bake at 325 degrees F (165 degrees C) for 20 minutes, or until very hot.

Homestyle Chicken & Mushroom Casserole

1 pkg. McCormick® Seasoning Mix
1 cup uncooked regular long-grain white rice 1 can
(4 oz.) sliced mushrooms, drained (I didn't use this because the kids wont eat them)
½ cup frozen peas 2 tbsp.
butter, cut into pieces (optional)
1½ lbs. boneless skinless chicken breast halves
1½ cups milk
1 cup water
Place rice, mushrooms, peas and butter (if desired) in 13x9x2-inch baking dish.
Top with chicken. MIX milk, water and Seasoning Mix until well blended. Pour over chicken and rice. Cover with foil. BAKE 45 min @ 375ΒΊ F or until chicken is cooked through and rice is tender. Let stand 5 min. Cut chicken into serving-size pieces. Stir rice before serving.
Meatloaf

1 pkg. McCormick® Meat Loaf Seasoning
Mix2 lbs. lean ground beef or turkey
2 eggs, lightly beaten
1/2 cup milk
1/4 cup dry bread crumbs OR 1 cup soft bread crumbs (2 slices bread)
1/2 cup tomato sauce

MIX all ingredients in large bowl until well blended.
SHAPE meat mixture into a loaf. Place in foil-lined baking pan or 9x5-inch loaf pan.
BAKE in 375° F oven 1 hour or until cooked through
I also got two dinners for the crockpot, pot roast & chicken n dumplings. Cool thing to is we will get leftovers from the dinners so lunch for me or a quick dinner. Im plan is to make this school year STRESS FREE!!
